On my recent return stay at Plantation Bay Resort and Spa in Cebu, I realized very quickly that my days were beginning not at the lagoon, not at the beach, and not even at the spa — but at the breakfast table. As a returning guest, I decided to make this trip a personal food crawl centered around mornings.

I stayed at one of the Water’s Edge rooms, where the louvered doors opening directly to the saltwater lagoon immediately reminded me of old New Orleans and Louisiana plantation architecture. Step outside and the lagoon stretches before you — the pièce de résistance of the approximately 28-acre estate. Early mornings there felt especially peaceful. Before the crowds fully woke up, the property belonged to the sound of the breeze, the water gently moving against the edges of the lagoon, and guests quietly heading toward coffee.

And at Plantation Bay, breakfast is not simply a meal squeezed in before activities. It becomes part of the vacation itself.
Slow Mornings, Sea Breeze, and Breakfast Worth Waking Up For

The resort’s 24-hour restaurant quickly became my breakfast headquarters. The dining area overlooks the water, and there is no need to rush through a meal there. Some mornings, I intentionally stayed in bed longer because vacations should allow for laziness. Breakfast food also has a flexibility that makes it comforting at almost any hour — whether at sunrise, nearly noon, or after a night of cocktails.
Their themed breakfast buffets feel like small culinary tours. Each morning brings a different international theme, allowing guests to try rotating cuisines without leaving the property.
The Filipino breakfast mornings were among my favorites. There is something comforting about seeing trays of Cebuano boneless danggit, beef tapa, garlic rice, and scrambled eggs beside baskets of warm pandesal. The pancit was especially memorable — savory, satisfying, and ideal with local coffee.
The fresh fruit station deserves special mention. Philippine mangoes are famous worldwide for their sweetness, and Plantation Bay serves them perfectly ripe and chilled. I kept returning for slices of mango, watermelon, pomelo, and the miniature pineapples sourced from Bukidnon. They are smaller than ordinary pineapples, sweeter, and tender enough that even the core can be eaten.
On other mornings, the buffet shifted toward international comfort food. One breakfast featured Italian selections with made-to-order pasta stations, pizzas, and Mediterranean dishes. Another highlighted Chinese favorites with dumplings, noodles, and rice dishes. The themes rotate with the season, keeping each stay interesting.
There are also live cooking stations where chefs prepare omelets to order, as well as a generous pastry section. The croissants are especially good — flaky, buttery, and best paired with coffee while lingering over the morning view. There were also ensaymadas, waffles, and breads fresh from the oven.
The Alpine Lounge: A Hidden Sanctuary

For guests who wake up later or simply want a quieter start to the day, there is the Alpine Lounge. Opening at 11AM, it feels completely different from the tropical atmosphere outside. Instead of palms and lagoons, the space has the feel of a European alpine café tucked away from the rest of the resort.

It is not heavily publicized since it is connected to Plantation Bay’s conference facilities, but it became one of my favorite discoveries during this stay. Their coffee, croissants, and pastries make for a lighter, chic breakfast option for those easing slowly into the day.
Route 66: The Morning Reward

My personal favorite breakfast ritual, however, happened at Route 66. The American diner-themed restaurant became my morning reward after cycling around the property. I would rent a bike at sunrise, make several laps around the resort while enjoying the sea breeze, then return the bicycle near the fitness center before walking over to Route 66 hungry and fully awake.
That was where I discovered the Barcelona Breakfast.

At first glance, it sounds simple: eggs, potatoes, and Jamón Serrano. But Plantation Bay turns it into something truly memorable. The potatoes arrive perfectly seasoned with smoky Spanish paprika—crisp on the outside, tender on the inside—while the rich, savory depth of the Jamón Serrano elevates every bite. Combined with a perfectly cooked egg, the dish is satisfyingly filling without feeling overly heavy.
It is the first meal that encourages you to slow down and linger at the table. Adding to the experience is the view just outside the diner: a unique water fountain feature crafted into a faux volcano right in the center of the pool. While the serving itself is quite generous, the flavors are so compelling that hungry guests could easily justify ordering a second plate.
And no breakfast at Plantation Bay feels complete without their Ube Milkshake. The resort makes it entirely from scratch using real ube transformed into house-made halaya and ice cream before becoming an impossibly thick milkshake. Unlike many commercially prepared versions, this one tastes unmistakably natural with no artificial aftertaste.
Beyond the Morning: Lunch and Dinner Options
Even beyond breakfast, the resort’s dining options remain impressive.
Palermo, which opens for dinner, serves Italian fare that balances comfort and refinement. Their Hand-prepared Caesar salad is well-loved for good reason, while the Steak Seduction selections cater to serious meat lovers. The Zucchini Puffs and Spanish cold cuts also make excellent starters.

Meanwhile, Fiji Restaurant offers beachside dining with flavors inspired by Asia and the Pacific. Lunch there became one of the highlights of my stay. Their Jumbo Prawn Tempura features enormous prawns wrapped in crisp batter, while the Nasi Goreng is perfect after a long swim. The Soba bowl offers a clean, salty, light broth, perfect for a light snack.
But the standout for me was “The Real Adobo.” Plantation Bay describes it as a harmony of salty, sour, savory, sweet, and lightly fermented flavors. The familiar Filipino dish feels richer and deeper here without losing its identity. I was still thinking about it long after the meal ended.
What makes Plantation Bay memorable is not only the quality of the food, but the way mornings unfold there. Breakfast does not feel rushed. Guests return for second helpings of fruit or one more pastry while watching the water outside. People stay longer, and conversations extend over coffee until the next thing you know, it’s already lunch time.
And after several mornings spent cycling through sea breezes, snacking on fresh tropical fruits, and discovering new breakfast favorites daily, I can confidently say this: Plantation Bay is the best resort in the Philippines — for breakfast lovers.
