Montage Los Cabos appoints celebrated Mexican chef Alejandro Euroza as Chef de Cuisine at Michelin-recognized Mezcal, elevating Baja-sourced, contemporary Mexican cuisine and reinforcing the resort’s global culinary reputation worldwide today.
LOS CABOS, MEXICO – Mezcal at Montage Los Cabos has appointed Alejandro Euroza as Chef de Cuisine, entrusting him with the leadership of the Michelin-recognized restaurant’s day-to-day operations and its evolving contemporary Mexican culinary direction. In his new role, he will focus on showcasing Baja’s local ingredients while drawing on cooking techniques from across Mexico, further aligning the restaurant with global expectations for authenticity, sustainability and destination-driven gastronomy.

Born and raised in Mexico City, Alejandro Euroza combines local insight with international training. He studied at the California Culinary Arts Institute in San Diego, building a solid technical foundation that has supported more than a decade of work in high-end hospitality. Before joining Montage Los Cabos, he served as Signature Chef at Carolina Restaurant at The St. Regis Punta Mita Resort, which held an AAA Five Diamond Award during his tenure, reinforcing his credentials in the ultra-luxury segment.
His previous experience also includes multiple roles at The St. Regis Mexico City’s Estudio Millesime and Estudio Millesime Panama, where he contributed to elevated dining concepts tailored to discerning international guests. In 2022, at LagoAlgo, a cultural center in Mexico City, he developed a sustainable farm-to-table culinary approach that emphasized responsible sourcing and local partnerships. This work led to recognition at Forbes’ Green Economy and Sustainable Development Forum, highlighting his alignment with the industry’s growing focus on ESG principles and sustainable destination development.
